Steamed Idli

These soft and fluffy steamed idli are a traditional South Indian breakfast. Made from a fermented batter of rice and lentils, they are naturally vegan and gluten-free. Serve with chutney and sambar for a complete meal.

    Rinse the idli rice, urad dal, and fenugreek seeds separately under cold water until the water runs clear.

    Soak the idli rice in enough water to cover by several inches for at least 6 hours or overnight.

    Soak the urad dal and fenugreek seeds together in enough water to cover by several inches for at least 6 hours or overnight.

    Drain the soaked urad dal and fenugreek seeds and grind them in a wet grinder or high-speed blender with a little water until you get a very smooth, fluffy batter.
