De bereidingswijze

Stap voor stap

  1. 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

    Ongeveer 1 min

  2. 2

Add the lamb pieces and brown them on all sides, about 5-7 minutes. Remove the lamb and set aside.

    Ongeveer 7 min

Tip van de kok: Do not overcrowd the pot; brown the lamb in batches if necessary.

  3. 3

Reduce heat to medium, add the onion to the pot, and cook until softened, about 5 minutes.

    Ongeveer 5 min

  4. 4

Stir in the garlic, tomato paste, harissa, ground coriander, ground cumin, and turmeric powder. Cook for 2 minutes, stirring constantly, until fragrant.

    Ongeveer 2 min

  5. 5

Return the lamb to the pot. Pour in the water, ensuring the lamb is mostly submerged. Bring to a boil, then reduce heat to low, cover, and simmer for 60 minutes.

    Ongeveer 1 uur

  6. 6

Add the chickpeas, carrots, and potatoes to the pot. Continue to simmer, covered, for another 15 minutes.

    Ongeveer 15 min

  7. 7

Stir in the zucchini and cook for an additional 10 minutes, or until all vegetables are tender.

    Ongeveer 10 min

Tip van de kok: Avoid overcooking the zucchini to maintain its texture.

  8. 8

While the stew simmers, prepare the couscous according to package directions, typically by soaking in hot water or broth for 5-10 minutes, then fluffing with a fork.

    Ongeveer 10 min

Tip van de kok: For extra flavor, use warm vegetable or chicken broth instead of water for the couscous.

  9. 9

Season the lamb stew with salt and black pepper to taste.

    Ongeveer 1 min

  10. 10

Serve the lamb and vegetable stew over the fluffed couscous. Garnish with fresh parsley if desired.
