    Combine the flour and salt in a large bowl. Make a well in the center.

    Add the warm water and egg to the well. Gradually mix the wet ingredients into the flour until a shaggy dough forms.

    Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.

    While the dough rests, place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil.

    Drain the potatoes thoroughly and return them to the hot pot. Mash them until smooth.
