Drain the soaked cannellini beans and rinse thoroughly. Place them in a large pot, cover with fresh water, and bring to a boil. Reduce heat and simmer for 20-30 minutes, or until the beans are tender but still hold their shape. Drain and set aside.

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped yellow onion and diced carrot, cooking until the onion is translucent and the carrot has softened, about 7-10 minutes.
