Kutya (Ukrainian Wheat Berry Pudding)
Kutya is a traditional Ukrainian ceremonial grain dish, often served during the Christmas season. This vegan version features tender wheat berries sweetened with honey or maple syrup and studded with poppy seeds, nuts, and dried fruit. It's a comforting and symbolic dessert.

Place the wheat berries in a large pot, cover with plenty of cold water, and bring to a boil. Boil for 5 minutes, then drain and rinse the wheat berries.

Return the rinsed wheat berries to the pot. Add the fresh water, bring to a boil, then reduce the heat to low, cover, and simmer for 60-90 minutes, or until the wheat berries are tender but still have a slight chew.

While the wheat berries cook, place the poppy seeds in a small bowl and cover them with the warm water. Let them soak for at least 30 minutes.

After soaking, drain the poppy seeds thoroughly. Grind them in a spice grinder, mortar and pestle, or small food processor until they form a thick paste.

Once the wheat berries are cooked, drain any excess water and let them cool slightly.

In a large mixing bowl, combine the cooked wheat berries, ground poppy seeds, honey (or maple syrup), walnuts, raisins, and optional almonds and orange zest.
