Elaboració

Pas a pas

  1. 1

Prepare the curry paste: In a mortar and pestle or food processor, combine the ginger, garlic, lemongrass, galangal, dried red chilies, coriander seeds, cumin seeds, turmeric powder, cardamom pods, cloves, nutmeg, and shrimp paste.

    Uns 10 min

Nota de cuina: If using a food processor, add a tiny bit of water or oil to help it blend into a smooth paste.

  2. 2

Heat the vegetable oil in a large pot or Dutch oven over medium heat.

    Uns 1 min

  3. 3

Add the sliced yellow onion and sauté until softened and translucent, about 5-7 minutes.

    Uns 7 min

  4. 4

Add the prepared curry paste to the pot and cook, stirring constantly, for 2-3 minutes until fragrant.

    Uns 3 min

Nota de cuina: Cooking the paste well develops its flavors.

  5. 5

Add the beef cubes to the pot and sear on all sides until lightly browned.

    Uns 5 min

  6. 6

Pour in the coconut milk and water, then stir in the fish sauce and sugar. Bring the mixture to a simmer.

    Uns 3 min

  7. 7

Reduce the heat to low, cover the pot, and let the beef simmer for 30 minutes, or until partially tender.

    Uns 30 min

  8. 8

Stir in the rinsed basmati rice, ensuring it is submerged in the liquid.

    Uns 1 min

  9. 9

Cover the pot tightly and continue to cook on low heat for another 20 minutes, or until the rice is cooked through and the liquid is absorbed.

    Uns 20 min

Nota de cuina: Avoid lifting the lid during this time to retain steam.

  10. 10

Remove the pot from the heat and let it rest, covered, for 10 minutes to allow the flavors to meld and the rice to fully steam.

    Uns 10 min

  11. 11

Fluff the rice gently with a fork before serving.

    Uns 1 min

  12. 12

Garnish with fresh coriander before serving.
