  2. 2

Add the lamb pieces and brown them on all sides, about 5-7 minutes. Remove the lamb and set aside.

  4. 4

Stir in the garlic, tomato paste, harissa, ground coriander, ground cumin, and turmeric powder. Cook for 2 minutes, stirring constantly, until fragrant.

    Uns 2 min

  5. 5

Return the lamb to the pot. Pour in the water, ensuring the lamb is mostly submerged. Bring to a boil, then reduce heat to low, cover, and simmer for 60 minutes.

Nota de cuina: Avoid overcooking the zucchini to maintain its texture.

  8. 8

While the stew simmers, prepare the couscous according to package directions, typically by soaking in hot water or broth for 5-10 minutes, then fluffing with a fork.

    Uns 10 min

Nota de cuina: For extra flavor, use warm vegetable or chicken broth instead of water for the couscous.

  9. 9

Season the lamb stew with salt and black pepper to taste.

    Uns 1 min

  10. 10

Serve the lamb and vegetable stew over the fluffed couscous. Garnish with fresh parsley if desired.
