  • 1 rklpalm sugar

    Rinse the jasmine rice thoroughly until the water runs clear, then drain well.

    Combine the rinsed rice, coconut milk, water, knotted pandan leaves, sliced ginger, and salt in a rice cooker or heavy-bottomed pot.

    Cook the rice according to your rice cooker's instructions or bring to a boil in a pot, then reduce heat to low, cover, and simmer for 15-20 minutes until all liquid is absorbed.

    Once cooked, turn off the heat and let the rice steam, covered, for another 10 minutes before fluffing with a fork.

    Heat frying oil in a wok or deep pan over medium heat.

    Fry the dried anchovies until golden and crispy, then remove with a slotted spoon and set aside on a paper towel-lined plate.

    In a food processor or mortar and pestle, blend or pound the shallots, garlic, dried red chilies, fresh red chilies (if using), and toasted belacan into a fine paste for the sambal.

    Heat cooking oil in a clean pan or wok over medium heat.
