This recipe creates a delicious, crispy layer of rice at the bottom of the pot, known as tahdig. It's a traditional and much-loved side dish in Persian cuisine, perfect for accompanying stews or grilled dishes. The golden-brown crust offers a delightful textural contrast to fluffy rice.

    Rinse the basmati rice several times under cold running water until the water runs clear. Transfer the rinsed rice to a large bowl, cover with water, and add the soaking salt. Let it soak for at least 30 minutes, or up to 2 hours.

    In a large non-stick pot with a tight-fitting lid, bring the boiling water to a rolling boil over high heat. Add the boiling salt.

    Drain the soaked rice and add it to the boiling water. Cook for 5-7 minutes, until the rice is par-boiled (al dente) but still firm in the center.
