    To make the broth, combine water, dried kelp, dried shiitake mushrooms, onion, and smashed garlic cloves in a medium pot. Bring to a boil over high heat.

    Remove the egg omelet from the skillet, let it cool slightly, then roll it up and slice it into thin ribbons. Set aside.

    In the same skillet, add a bit more oil if needed. Sauté the julienned zucchini with a pinch of salt for 2-3 minutes until tender but still crisp. Remove and set aside.

    Bring a large pot of water to a rolling boil. Cook the somyeon noodles according to package directions, typically for 3-4 minutes.
