Crispy on the outside and soft on the inside, these Moroccan potato fritters are seasoned with fresh herbs and warm spices. A popular street food snack, they are perfect served warm on their own or with a dipping sauce.

Place the whole potatoes in a large pot and add enough cold water to cover them by an inch.

Bring the water to a boil over high heat, then reduce to a simmer and cook until the potatoes are very tender when pierced with a fork, about 20-25 minutes.
