Alheira de Mirandela

- 50 gpotato chips, thinly sliced

Carefully make a small incision along the length of each alheira sausage using a sharp knife.

Heat the olive oil in a large non-stick frying pan over medium heat.

Place the alheira sausages in the hot pan, cut-side down, and cook for about 8-10 minutes, turning occasionally, until golden brown and cooked through.

While the sausages are cooking, in a separate small frying pan, fry the eggs to your desired doneness.
