  • 60 glemon grass, finely minced
  • 2 stk.shallot, finely minced
  • 3 fedgarlic, finely minced
  • 2 spsk.fish sauce
  • 1 spsk.sugar
  • 1 spsk.soy sauce
  • 1 spsk.honey
  • 1 tsk.sesame oil
  • 0,5 tsk.black pepper

cha (egg meatloaf)

  • 100 gpork belly, finely minced
  • 200 gground pork
  • 10 gwood ear mushroom, dried, rehydrated and finely chopped
  • 10 gvermicelli noodle, dried, rehydrated and chopped
  • 1 stk.shallot, finely minced
  • 1 spsk.fish sauce
  • 0,5 tsk.sugar
  • 0,25 tsk.black pepper
  • 3 stk.egg
  • 1 stk.egg yolk

bi (shredded pork skin)

  • 200 gshredded pork skin, prepared

served with

  • 2 kopbroken rice
  • 3 kopwater

garnish

  • 1 stk.cucumber, sliced
  • 1 stk.tomato, sliced
  • 0,5 koppickled carrot
  • 0,5 koppickled daikon
  • 4 stk.fried egg, optional(valgfrit)

sauce

  • 1 kopnuoc cham, for serving
  • 4 spsk.scallion oil, for serving

    Prepare the pork chop marinade by combining lemon grass, shallot, garlic, fish sauce, sugar, soy sauce, honey, sesame oil, and black pepper in a bowl.

    For the cha (egg meatloaf), combine minced pork belly, ground pork, rehydrated wood ear mushrooms, chopped vermicelli noodles, minced shallot, fish sauce, sugar, and black pepper in a mixing bowl.

    Add 2 of the eggs to the meat mixture and mix well until everything is evenly combined.

    Press the mixture into a shallow, heatproof dish or ramekin, ensuring an even layer.
