  • 180 gpeanut butter, natural, unsweetened
  • 60 gtomato paste
  • 1 stk.yellow onion, chopped
  • 3 fedgarlic, minced
  • 1 spsk.ginger, grated
  • 1 stk.bell pepper, chopped
  • 2 stk.carrot, peeled and sliced
  • 2 stk.potato, peeled and cubed
  • 1 stk.hot pepper, whole, optional for heat(valgfrit)
  • 4 kopbeef broth
  • 2 spsk.vegetable oil
  • 1 tsk.salt
  • 0,5 tsk.black pepper

  • 1 kopwhite rice, cooked, for serving

    Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.

    Season the beef stew meat with salt and black pepper, then brown it in the hot oil on all sides. Work in batches if necessary to avoid overcrowding the pot.

    Remove the browned meat from the pot and set aside.

    Add the chopped yellow onion to the pot and sauté until softened and translucent, about 5-7 minutes.

    Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

    Add the tomato paste and cook for 2-3 minutes, stirring constantly, to deepen its flavor.

    In a separate bowl, whisk together the peanut butter with enough warm beef broth to create a smooth, pourable paste.

    Return the beef to the pot, then pour in the remaining beef broth and the peanut butter mixture.

    Add the chopped bell pepper, sliced carrots, cubed potatoes, and the whole hot pepper (if using) to the pot.
