  • 1 stk.yellow onion, halved
  • 1 stk.carrot, roughly chopped
  • 1 stk.celery stalk, roughly chopped

  • 0,5 tsk.black peppercorns
  • 300 garborio rice
  • 100 gstaka butter, melted

    Place the lamb shoulder pieces in a large pot and cover with water.

    Kokkens note: Ensure the meat is fully submerged.

    Bring the water to a boil over high heat, then reduce the heat to low and skim off any foam that rises to the surface.

    Add the yellow onion, carrot, celery stalk, bay leaf, salt, and black peppercorns to the pot.

    Cover the pot and simmer gently for 2 to 2.5 hours, or until the lamb is very tender and easily pulls apart with a fork.

    Carefully remove the lamb from the pot and set aside to cool slightly. Strain the broth through a fine-mesh sieve into a clean pot, discarding the solids.

    Shred the lamb meat from the bones, discarding any fat or gristle. Set the shredded lamb aside.

    Bring the strained broth to a boil. Add the arborio rice and stir well.

    Reduce the heat to low, cover the pot, and cook for 15-20 minutes, or until the rice has absorbed most of the broth and is tender, stirring occasionally to prevent sticking.

    Stir the shredded lamb back into the rice.

    Pour the melted staka butter over the rice and stir gently to combine.
