Trin for trin
- 1
Rinse the buckwheat groats thoroughly under cold running water in a fine-mesh sieve until the water runs clear.
Ca. 2 min.
Kokkens note: Rinsing removes any dust or debris and improves the texture.
- 2
Heat the vegetable oil in a medium saucepan over medium heat.
Ca. 1 min.
- 3
Add the rinsed buckwheat groats to the saucepan and toast them for 3-5 minutes, stirring frequently, until they are fragrant and slightly darker in color.
Ca. 4 min.
Kokkens note: Toasting enhances the nutty flavor of the kasha.
- 4
Pour in the water and add the salt. Bring the mixture to a rolling boil.
Ca. 3 min.
- 5
Once boiling, reduce the heat to low, cover the saucepan tightly with a lid, and simmer for 15 minutes, or until all the water has been absorbed.
Ca. 15 min.
Kokkens note: Do not lift the lid during simmering to retain steam.
- 6
Remove the saucepan from the heat and let it rest, covered, for 5 minutes.
Ca. 5 min.
Kokkens note: This allows the kasha to finish steaming and become fluffy.
- 7
Fluff the kasha with a fork before serving.
