    Wash and peel the raw banana, carrot, and potato. Cut all vegetables (raw banana, carrot, potato, green beans, and drumstick if using) into uniform 2-inch long, ½-inch thick pieces.

    Combine the prepared raw banana, carrot, potato, green beans, and drumstick in a large pot or Dutch oven.

    Add 1.5 cups of water and 1 teaspoon of salt to the pot, ensuring the vegetables are mostly submerged.

    Bring the mixture to a rolling boil over medium-high heat, then reduce the heat to medium-low, cover the pot, and simmer for 10-15 minutes.

    Kokkens note: The vegetables should be tender when pierced with a fork but still retain their shape and a slight bite. Avoid overcooking, as they will continue to cook slightly when the coconut paste is added.

    While the vegetables are simmering, prepare the coconut paste: combine the 1 cup grated fresh coconut, 2 green chilies (stems removed), 0.5 teaspoon cumin seeds, 0.25 teaspoon turmeric powder, and 0.25 cup water in a blender.

    Blend the ingredients until a smooth, thick paste forms. If the blender struggles, add a tiny bit more water, one teaspoon at a time, to help it blend without making it too thin.

    Once the vegetables are tender, stir in the prepared coconut paste into the pot with the vegetables.

    Reduce the heat to the lowest setting or remove the pot from the heat. Gently fold in the 0.5 cup whisked vegan yogurt.

    Heat 1 tablespoon of coconut oil in a small pan over medium heat for tempering.
