  • 2 spsk.honey
  • 20 gunsalted butter, melted
  • 50 gwalnuts, finely chopped
  • 50 graisins
  • 1 tsk.orange zest

egg wash

  • 1 stk.egg, large, for egg wash

glaze

  • 100 gpowdered sugar
  • 2 spsk.lemon juice

    In a small bowl, combine the lukewarm milk, granulated sugar, and active dry yeast for the dough. Let it sit for 5-10 minutes until foamy.

    In a large mixing bowl, whisk together the all-purpose flour and salt.

    Add the proofed yeast mixture, egg, melted unsalted butter, and vanilla extract to the flour mixture. Mix until a shaggy dough forms.

    Turn the dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.

    Place the dough in a lightly oiled bowl, cover with plastic wrap or a clean kitchen towel, and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.

    While the dough is rising, prepare the poppy seed filling. Place the poppy seeds in a saucepan and cover with milk. Bring to a simmer, then reduce heat and cook for 15-20 minutes, stirring occasionally, until the milk is absorbed and the seeds are softened.

    Remove from heat and let the poppy seeds cool slightly. If you have a meat grinder or food processor, grind the poppy seeds twice for a smoother texture. If not, mash them well with a fork or potato masher.

    In a bowl, combine the ground poppy seeds with granulated sugar, honey, melted unsalted butter, finely chopped walnuts, raisins, and orange zest. Mix well to combine.

    Once the dough has doubled, gently punch it down and turn it out onto a lightly floured surface. Roll the dough into a rectangle approximately 12x16 inches (30x40 cm).
