Place the sliced eggplant in a colander, sprinkle with salt, and let it sit for 20 minutes to draw out excess moisture.

While the eggplant rests, preheat your oven to 180°C (350°F).

Pat the eggplant slices thoroughly dry with paper towels.

Heat vegetable oil in a large frying pan or skillet over medium-high heat.
