Tsoureki (Greek Sweet Bread)
Tsoureki is a traditional Greek sweet bread, often made for holidays. This recipe yields a soft, slightly chewy loaf with aromatic notes of citrus and mahleb. It's perfect for breakfast or as a sweet snack.

In a large bowl, whisk together the all-purpose flour, active dry yeast, granulated sugar, mahleb, and salt.

In a separate bowl, whisk the lukewarm milk, eggs, orange zest, and melted butter until well combined.

Pour the wet ingredients into the dry ingredients and mix with a wooden spoon or spatula until a shaggy dough forms.

Turn the dough out onto a lightly floured surface and knead for 10-15 minutes, until it's smooth and elastic.

Place the dough in a lightly oiled bowl, turning once to coat, then cover with plastic wrap or a clean kitchen towel.

Let the dough rise in a warm place for 1.5 to 2 hours, or until doubled in size.

Gently punch down the risen dough and divide it into three equal pieces.

Roll each piece into a long rope, about 18-20 inches (45-50 cm) long.

Braid the three ropes together, pinching the ends to seal them.

Carefully transfer the braided dough to a baking sheet lined with parchment paper.

Cover the tsoureki loosely with plastic wrap or a kitchen towel and let it rise again for 45-60 minutes, or until noticeably puffy.

Preheat your oven to 180°C (350°F).

In a small bowl, whisk the egg yolk with water to create an egg wash.
