  • 0,5 tsk.mahleb, ground
  • 0,5 tsk.salt

  • 1 spsk.water

    In a large bowl, whisk together the all-purpose flour, active dry yeast, granulated sugar, mahleb, and salt.

    In a separate bowl, whisk the lukewarm milk, eggs, orange zest, and melted butter until well combined.

    Pour the wet ingredients into the dry ingredients and mix with a wooden spoon or spatula until a shaggy dough forms.

    Turn the dough out onto a lightly floured surface and knead for 10-15 minutes, until it's smooth and elastic.

    Kokkens note: The dough will be sticky at first; resist the urge to add too much extra flour.

    Place the dough in a lightly oiled bowl, turning once to coat, then cover with plastic wrap or a clean kitchen towel.

    Let the dough rise in a warm place for 1.5 to 2 hours, or until doubled in size.

    Gently punch down the risen dough and divide it into three equal pieces.

    Preheat your oven to 180°C (350°F).

    In a small bowl, whisk the egg yolk with water to create an egg wash.
