In a large bowl, combine the all-purpose flour, active dry yeast, sugar, and salt.

Gradually add the warm water and olive oil to the dry ingredients, mixing until a shaggy dough forms.

Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until it is smooth and elastic.

Place the dough in a greased bowl, cover with a clean kitchen towel or plastic wrap, and let it rise in a warm place for 1 hour, or until doubled in size.

Once risen, gently punch down the dough and divide it into 8-10 equal pieces.

Roll each piece into an oval or torpedo shape, about 1 cm thick.

Heat the vegetable oil in a deep pot or Dutch oven to 170-180°C (340-350°F).

Carefully place 2-3 dough pieces into the hot oil, ensuring not to overcrowd the pot.

Remove the fried dough with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

Once cooled slightly, carefully slice each fried dough piece lengthwise, without cutting all the way through, to create a pocket.
