Vegan Persian Tahdig

This recipe creates a delicious, crispy layer of rice at the bottom of the pot, known as tahdig. It's a traditional and much-loved side dish in Persian cuisine, perfect for accompanying stews or grilled dishes. The golden-brown crust offers a delightful textural contrast to fluffy rice.

    Rinse the basmati rice several times under cold running water until the water runs clear. Transfer the rinsed rice to a large bowl, cover with water, and add the soaking salt. Let it soak for at least 30 minutes, or up to 2 hours.

    Kokkens note: Soaking helps to elongate the rice grains and prevents them from breaking during cooking.

    In a large non-stick pot with a tight-fitting lid, bring the boiling water to a rolling boil over high heat. Add the boiling salt.

    Drain the soaked rice and add it to the boiling water. Cook for 5-7 minutes, until the rice is par-boiled (al dente) but still firm in the center.

    Drain the par-boiled rice thoroughly in a colander. Set aside.

    In a small bowl, combine the ground saffron threads with the hot water. Let it steep for a few minutes.

    Return the same pot to medium-low heat. Add the melted vegan butter and swirl to coat the bottom evenly. Pour in the steeped saffron water.

    Carefully and gently spoon the par-boiled rice into the pot, mounding it into a pyramid shape. Do not press down on the rice.

    Cover the pot with a clean kitchen towel, then place the lid tightly on top. The towel will absorb excess steam, preventing the rice from becoming soggy.

    Cook on medium-low heat for 10 minutes, then reduce the heat to low and continue cooking for 35-40 minutes.

    Once cooking is complete, remove the pot from the heat and let it rest, still covered, for 10 minutes.

    To serve, place a large serving platter over the pot and carefully invert the pot onto the platter. The tahdig should release in a beautiful golden crust.
