Bring the water for the bath to a rolling boil in a large pot, then carefully add the baking soda. The mixture will foam up significantly.

Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a long rope, about 50-60 cm (20-24 inches) long, thicker in the middle and tapering at the ends.
