Combine the rinsed sushi rice and water in a medium saucepan. Bring to a boil over high heat, then immediately reduce heat to low, cover, and simmer for 15 minutes.

Remove the saucepan from heat and let it rest, covered, for 10 minutes. Do not open the lid.

While the rice rests, prepare the sushi vinegar by whisking together the rice vinegar, sugar, and salt in a small bowl until the sugar and salt dissolve.

Transfer the cooked rice to a large, shallow non-metallic bowl or a baking sheet. Pour the sushi vinegar evenly over the hot rice.

Fan the rice with a piece of cardboard or a hand fan while continuing to fold until the rice cools to room temperature and becomes glossy. This process helps the rice develop its signature sushi texture.

Arrange a small amount of julienned cucumber, sliced avocado, and julienned carrot in a line across the center of the rice-covered nori.
