  • 2 spsk.fresh parsley, chopped

    Rinse the wild rice thoroughly under cold running water in a fine-mesh sieve until the water runs clear.

    In a medium saucepan, bring the vegetable broth to a boil.

    Add the rinsed wild rice to the boiling broth, then reduce the heat to low, cover, and simmer for 40-45 minutes, or until the rice is tender and most of the liquid has been absorbed.

    Kokkens note: Avoid lifting the lid too often to maintain a consistent cooking temperature.

    While the rice is cooking, heat the olive oil in a large skillet over medium heat.

    Add the yellow onion and celery stalk to the skillet and cook, stirring occasionally, until softened, about 5-7 minutes.

    Stir in the garlic and dried thyme and cook for another minute until fragrant.

    Add the chopped pecans to the skillet and toast for 2-3 minutes, stirring frequently, until lightly golden and aromatic.

    Once the wild rice is cooked, remove it from the heat and let it rest, covered, for 5 minutes.

    Fluff the wild rice with a fork and then transfer it to the skillet with the sautéed vegetables and pecans.
