The method
Step by step
- 1
Place the chopped mango flesh into a high-speed blender.
About 5 min
Cook’s note: Using very ripe, sweet, and non-fibrous mangoes like Alphonso or Kesar will give the best results.
- 2
Add the ground cardamom, saffron strands, and optional sugar to the blender.
About 1 min
Cook’s note: Start with less sugar and add more only if needed, as the sweetness of mangoes can vary greatly.
- 3
Blend on high speed until the mixture is completely smooth and creamy, with no lumps remaining.
About 2 min
- 4
Check the consistency. If the purée is too thick for your preference, add the optional milk and blend for a few more seconds to combine.
About 1 min
Cook’s note: Add milk gradually to avoid making the aamras too thin.
- 5
Transfer the aamras to a bowl, cover it, and place it in the refrigerator to chill for at least 30 minutes.
About 30 min
Cook’s note: Chilling enhances the flavor and provides a more refreshing experience.
- 6
Serve the chilled aamras in bowls, topped with chopped pistachios for garnish if desired.
About 1 min
Cook’s note: Aamras is traditionally served with hot puris (fried bread) for a delicious contrast in temperature and texture.
