  • 2 tbspolive oil
  • 2 pcsegg
  • 50 gpotato chips, thinly sliced
  • 0.5 tspsalt
  • 0.25 tspblack pepper, freshly ground

  • 1 tbspparsley, fresh, chopped(optional)

The method

Step by step

    Carefully make a small incision along the length of each alheira sausage using a sharp knife.

    Cook’s note: Be careful not to cut too deep, just enough to split the skin.

    Heat the olive oil in a large non-stick frying pan over medium heat.

    Place the alheira sausages in the hot pan, cut-side down, and cook for about 8-10 minutes, turning occasionally, until golden brown and cooked through.

    While the sausages are cooking, in a separate small frying pan, fry the eggs to your desired doneness.
