  • 300 gpotato, peeled and diced into 1 cm cubes
  • 1 tbspvegetable oil
  • 150 mlheavy cream
  • 150 gswiss cheese, grated, such as Gruyère or Emmental

  • 0.5 tspblack pepper, freshly ground

  • 1 pcsyellow onion, thinly sliced
  • 2 tbspbutter

The method

Step by step

    Bring a large pot of salted water to a boil.

    Add the pasta and diced potato to the boiling water and cook according to pasta package instructions, usually about 8-10 minutes, until al dente.

    While the pasta and potatoes cook, heat the butter in a separate frying pan over medium heat.

    Add the sliced yellow onion to the pan and fry, stirring occasionally, until deeply golden brown and crispy.

    Once cooked, drain the pasta and potatoes well, reserving about a cup of the cooking water.

    Return the drained pasta and potatoes to the empty pot.

    Pour in the heavy cream and half of the grated swiss cheese.

    Stir everything together over low heat until the cheese is melted and the sauce is creamy, adding a splash of reserved cooking water if it's too thick.

    Season with salt and black pepper to taste.

    Transfer the Älplermagronen to serving bowls.

    Top each serving with the remaining grated swiss cheese and a generous amount of the crispy fried yellow onion.
