  • 120 mlargan oil, culinary grade
  • 60 mlhoney
  • 1 pinchsalt(optional)

The method

Step by step

    Preheat your oven to 160°C (325°F) or a dry skillet over medium-low heat.

    Spread the almonds in a single layer on a baking sheet or in the dry skillet.

    Roast the almonds for 10-15 minutes, stirring occasionally, until lightly golden and fragrant. Be careful not to burn them.

    Cook’s note: Roasting enhances the nutty flavor. If using a skillet, stir constantly for even browning.

    Remove the almonds from the oven or skillet and let them cool completely.

    Once cooled, transfer the almonds to a high-speed blender or food processor.

    Process the almonds until they form a fine powder, then continue processing until they release their oils and turn into a smooth, creamy butter. This may take 5-10 minutes, scraping down the sides as needed.

    Cook’s note: Patience is key here; the almonds will go from powder to a thick paste, then to a runny butter.

    With the blender or food processor still running on low, slowly drizzle in the argan oil until fully incorporated and the mixture is smooth.

    Add the honey and the pinch of salt (if using) and blend for another minute until everything is well combined.

    Pour the amlou into a clean jar or serving bowl. It should have a pourable consistency.

    Cook’s note: If it's too thick, add a little more argan oil until desired consistency is reached.
