The method

Combine the short grain rice and water in a medium saucepan. Bring to a boil over medium-high heat.

Reduce heat to low, cover, and simmer for 10-12 minutes, or until the water is mostly absorbed and the rice is par-cooked.

Add the milk, granulated sugar, lemon zest, and cinnamon stick to the rice. Increase heat to medium-low.

Cook, stirring frequently to prevent sticking, for 20-25 minutes, or until the rice is tender and the mixture has thickened to a creamy consistency.

Remove the lemon zest and cinnamon stick from the rice pudding.

In a small bowl, whisk the egg yolks with a pinch of salt. Take about half a cup of the hot rice pudding and slowly whisk it into the egg yolks to temper them.

Pour the tempered egg yolk mixture back into the saucepan with the rice pudding. Stir continuously for 2-3 minutes over low heat until slightly thicker.
