The method

Step by step

  1. 1

Heat the vegetable oil in a large pot or Dutch oven over medium heat.

    About 1 min

  2. 2

Add the yellow onion and cook, stirring occasionally, until softened and translucent, about 5-7 minutes.

    About 7 min

  3. 3

Stir in the minced garlic and grated ginger, and cook for another minute until fragrant.

    About 1 min

Cook’s note: Be careful not to burn the garlic.

  4. 4

Add the turmeric powder, cumin powder, black pepper, and salt. Stir well to coat the onions and cook for 30 seconds.

    About 1 min

Cook’s note: Toasting the spices briefly enhances their flavor.

  5. 5

Add the green cabbage, carrots, and potatoes to the pot. Stir to combine with the spiced onion mixture.

    About 2 min

Cook’s note: Ensure all vegetables are well coated with the spices.

  6. 6

Pour in the vegetable broth and water. Bring the mixture to a gentle simmer.

    About 3 min

  7. 7

Reduce the heat to low, cover the pot, and let it simmer for 20-25 minutes, or until the vegetables are tender.

    About 25 min

Cook’s note: Check occasionally and stir to prevent sticking, adding a splash more water if needed.

  8. 8

Taste and adjust seasoning as needed.

    About 1 min

  9. 9

Garnish with fresh cilantro before serving, if desired.

Cook’s note: Traditionally served with injera or rice.
