The method

If using fresh fava beans, blanch them in boiling water for 2-3 minutes, then drain and peel off the outer skin to reveal the bright green inner bean.

Heat the vegetable oil in a medium pot or deep skillet over medium heat.

Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to brown it.

Stir in the turmeric powder and cook for another 30 seconds to bloom the spice.

Add the peeled fava beans and chopped fresh dill to the pot. Sauté for 3-5 minutes, stirring occasionally, until the beans are lightly coated and heated through.

Pour in the water, add the salt and black pepper, and bring the mixture to a gentle boil.

Reduce the heat to low, cover the pot, and simmer for 30 minutes, or until the fava beans are tender.
