The method

Preheat your oven to 200°C (400°F) and grease a 20cm (8-inch) square or round baking dish.

In a medium bowl, whisk together the all-purpose flour, the batter portion of granulated sugar, baking powder, and salt.

Pour the milk and melted butter into the dry ingredients and stir just until a thick batter forms. Do not overmix.

Spread the batter evenly across the bottom of your prepared baking dish.

Scatter the mixed berries evenly over the top of the batter.

Sprinkle the remaining topping portion of granulated sugar over the berries.

Carefully and slowly pour the boiling water over the entire surface. Do not stir.

Bake for 30-35 minutes, or until the pudding top is golden brown and a skewer inserted into the cakey part comes out clean.
