Step by step

  1. 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

  2. 2

Add the chicken thigh pieces and cook until lightly browned on all sides, about 5-7 minutes.

    About 7 min

Cook’s note: Do not overcrowd the pot; cook in batches if necessary.

  3. 3

Remove the chicken from the pot and set aside.

  4. 4

Add the yellow onion, carrot, and celery to the pot and cook until softened, about 8-10 minutes.

    About 10 min

Cook’s note: Stir occasionally to prevent sticking.

  5. 5

Stir in the garlic, red bell pepper, and sweet paprika and cook for another 2 minutes until fragrant.

Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes, or until the chicken is cooked through and the rice is tender.

Cook’s note: Check the rice for doneness; it should be soft but not mushy.

  9. 9
