The method

Step by step

    Rinse the hulled split mung beans thoroughly under cold water until the water runs clear.

    Soak the rinsed mung beans in warm water for at least 30 minutes, or up to 2 hours, until they soften.

    Drain the soaked mung beans and transfer them to a small saucepan. Add enough fresh water to just cover the beans.
