  • 1 pcsdaikon radish, julienned
  • 1 pcscarrot, julienned
  • 0.5 cuprice vinegar
  • 2 tbspsugar
  • 0.5 cupwater

  • 4 tbspmayonnaise
  • 0.5 pcscucumber, sliced
  • 0.25 cupcilantro, fresh leaves
  • 1 pcsjalapeño, sliced(optional)

The method

Step by step

    In a medium bowl, combine the pork shoulder, fish sauce, soy sauce, sugar, minced garlic, and black pepper. Mix well and let marinate for at least 30 minutes, or preferably longer in the refrigerator.

    For the pickled vegetables, combine the julienned daikon radish and carrot in a heatproof bowl.

    In a small saucepan, bring the rice vinegar, sugar, and water to a simmer, stirring until the sugar dissolves. Pour the hot liquid over the daikon and carrot.

    Let the pickled vegetables cool to room temperature, then refrigerate until ready to use.

    Preheat a grill or grill pan to medium-high heat.
