Mise en place

Ingredients

  • 4 pcslarge egg
  • 2 cupmilk
  • 0.75 cupgranulated sugar
  • 60 gunsalted butter, melted
  • 0.5 cupall-purpose flour
  • 1 tspbaking powder
  • 0.25 tspsalt
  • 1 tspvanilla extract
  • 1.5 cupsweetened shredded coconut

Equipment

9-inch pie plate · measuring cups · blender · wire rack · measuring spoons · oven

The method

Step by step

  1. 1

Preheat your oven to 175°C (350°F) and grease a 9-inch pie plate.

    About 2 min

Cook’s note: Generously greasing the plate ensures the pie releases easily.

  2. 2

Add the milk, eggs, granulated sugar, melted unsalted butter, all-purpose flour, baking powder, salt, and vanilla extract to a blender.

    About 3 min

Cook’s note: Adding wet ingredients first helps the blender work more efficiently.

  3. 3

Blend on high speed for 2 minutes, until the batter is completely smooth and slightly frothy.

    About 2 min

  4. 4

Pour the batter into the prepared pie plate.

    About 1 min

  5. 5

Let the batter rest in the pie plate for 5 minutes to allow it to settle.

    About 5 min

Cook’s note: This brief rest helps the layers separate during baking.

  6. 6

Sprinkle the sweetened shredded coconut evenly over the top of the batter.

    About 1 min

  7. 7

Carefully place the pie in the preheated oven and bake for 40-45 minutes.

    About 40 min

Cook’s note: The pie is done when the center is just set and a knife inserted near the middle comes out clean.

  8. 8

Remove the pie from the oven and let it cool on a wire rack for at least 30 minutes before slicing.

    About 30 min

Cook’s note: The pie will firm up as it cools, making it easier to slice neatly.
