  • 1 pcsbell pepper, any color, cored and cut into 1-inch pieces
  • 400 gcanned crushed tomato
  • 0.5 cupolive oil
  • 1.5 tspdried oregano
  • 1 tspsalt
  • 0.5 tspblack pepper, freshly ground

garnish

  • 0.25 cupfresh parsley, chopped

The method

Step by step

    Preheat your oven to 200°C (400°F).

    In a large roasting pan or baking dish, combine the potato, zucchini, eggplant, yellow onion, garlic, and bell pepper.
