  • 800 gcanned cannellini bean, drained and rinsed
  • 2 tbspolive oil
  • 2 clovegarlic, finely chopped
  • 1 pinchsalt
  • 1 pinchblack pepper, freshly ground

garnish

  • 2 tbspfresh parsley, chopped

Equipment

large skillet · knife · cutting board

The method

Step by step

  1. 1

Heat the olive oil in a large skillet or frying pan over medium-high heat.

    About 2 min

  2. 2

Add the butifarra sausages to the hot pan and sear them on all sides until nicely browned and cooked through, about 10-15 minutes.

    About 15 min

Cook’s note: Ensure the sausages are cooked thoroughly, as butifarra is a fresh sausage.

  3. 3

Remove the cooked sausages from the pan and set them aside on a plate, keeping them warm.

    About 1 min

  4. 4

Reduce the heat to medium and add the chopped garlic to the same skillet, cooking for about 1 minute until fragrant.

    About 1 min

Cook’s note: Do not burn the garlic; it should be lightly golden.

  5. 5

Add the drained and rinsed cannellini beans to the skillet with the garlic. Stir well to combine and heat through for 5-7 minutes, allowing them to absorb the flavors from the pan.

    About 7 min

Cook’s note: Stir gently to avoid mashing the beans.

  6. 6

Season the beans with salt and freshly ground black pepper to taste.

    About 1 min

  7. 7

Slice the butifarra sausages into thick rounds or serve them whole alongside the warm beans.

    About 2 min

  8. 8

Garnish generously with fresh chopped parsley before serving.

    About 1 min

Cook’s note: A sprinkle of good quality paprika can also be added for extra flavor and color.
