Cheesy Cauliflower Mash

Mise en place

Ingredients

Ingredients

  • 1 pcscauliflower, cut into florets
  • 60 gcream cheese, softened
  • 120 gcheddar cheese, shredded
  • 2 tbspbutter
  • 0.5 tspgarlic powder
  • 0.5 tspsalt
  • 0.25 tspblack pepper, freshly ground

garnish

  • 1 tbspchives, fresh, chopped(optional)

Equipment

large bowl · large pot · colander · potato masher

The method

Step by step

  1. 1

Bring a large pot of lightly salted water to a rolling boil.

    About 5 min

  2. 2

Add the cauliflower florets to the boiling water and cook for 10-15 minutes, or until very tender.

    About 15 min

Cook’s note: The cauliflower should be soft enough to easily pierce with a fork.

  3. 3

Drain the cauliflower thoroughly in a colander. For best results, let it sit for a few minutes to steam dry, or gently press out any excess water.

    About 2 min

Cook’s note: Removing extra moisture prevents a watery mash.

  4. 4

Transfer the drained cauliflower to a large bowl or back into the dry pot.

    About 1 min

  5. 5

Add the cream cheese, shredded cheddar cheese, butter, garlic powder, salt, and black pepper to the cauliflower.

  6. 6

Mash the mixture using a potato masher, fork, or an immersion blender until smooth and creamy.

    About 2 min

Cook’s note: For an extra smooth mash, use an immersion blender, but be careful not to over-process as it can become gummy.

  7. 7

Taste and adjust seasoning as needed.

  8. 8

Serve hot, garnished with fresh chives if desired.
