Tender chicken breasts are browned and then gently simmered with onions, peppers, and mushrooms in a light sherry sauce. Each piece is finished with a melted slice of Monterey Jack cheese for a simple yet satisfying one-pan meal.

  • 1 tspsalt
  • 0.5 tspblack pepper, freshly ground
  • 0.25 cupall-purpose flour
  • 2 tbspbutter, unsalted
  • 0.5 cupcooking sherry
  • 100 gyellow onion, thinly sliced
  • 100 gcremini mushroom, sliced
  • 75 ggreen bell pepper, thinly sliced
  • 120 gmonterey jack cheese, sliced

The method

Step by step

    Pat the chicken breasts dry with a paper towel and season both sides with salt and black pepper.

    Spread the all-purpose flour on a plate and dredge each chicken breast, coating it lightly and shaking off any excess.

    Melt the butter in a large skillet with a lid over medium-high heat.

    Carefully place the floured chicken in the hot skillet and cook for about 5 minutes per side until golden brown.

    Reduce the heat to low and pour the cooking sherry into the skillet around the chicken.

    Add the sliced yellow onion, mushrooms, and green bell pepper to the skillet, arranging them around the chicken.
