Chicken Velveeta Soup

Mise en place

Ingredients

  • 450 gprocessed cheese, cubed
  • 950 mlchicken broth
  • 300 gcooked chicken, shredded or diced
  • 280 gcanned corn, drained
  • 280 gcanned mixed vegetables, drained
  • 1 tsponion powder(optional)
  • 0.5 tspblack pepper, freshly ground(optional)

Equipment

ladle · large pot · cutting board · knife · whisk

The method

Step by step

  1. 1

In a large pot or Dutch oven, combine the chicken broth and the cubed processed cheese.

    About 1 min

Cook’s note: Cubing the cheese before adding it to the pot helps it melt much faster and more evenly.

  2. 2

Heat the pot over medium-low heat, stirring or whisking frequently, until the cheese is fully melted and the base is smooth.

    About 7 min

Cook’s note: Low heat is key to prevent the cheese from scorching on the bottom of the pot.

  3. 3

Stir in the drained corn, drained mixed vegetables, and the cooked chicken.

    About 1 min

  4. 4

Season with onion powder and black pepper, if you are using them.

    About 1 min

  5. 5

Increase the heat to medium and bring the soup to a gentle simmer, then cook for 5 minutes, stirring occasionally.

    About 5 min

Cook’s note: Avoid a rapid boil, which can cause the soup to separate or stick.

  6. 6

Ladle the hot soup into bowls and serve immediately.
