  • 1 tbsplemon juice

The method

Step by step

    In a medium bowl, whisk together the chickpea flour, water, olive oil, salt, and black pepper until smooth and no lumps remain.

    Cover the bowl and let the batter rest at room temperature for at least 30 minutes, or up to 2 hours.

    Preheat your oven to 220°C (425°F) and place a 20-25 cm (8-10 inch) cast iron skillet or oven-safe pan inside to heat up.

    Carefully remove the hot pan from the oven and drizzle a little olive oil into it, swirling to coat the bottom.
