The method

Step by step

  1. 1

Heat the olive oil in a large skillet or deep pan over medium heat.

    About 1 min

  2. 2

Add the yellow onion and red bell pepper to the pan and sauté for 5-7 minutes until softened.

    About 7 min

  3. 3

Stir in the garlic, cumin, paprika, and chili powder (if using) and cook for another minute until fragrant.

    About 1 min

Cook’s note: Be careful not to burn the garlic.

  4. 4

Pour in the canned crushed tomatoes, chickpeas, and water. Stir to combine.

    About 1 min

  5. 5

Season with salt and black pepper.

Cook’s note: Adjust seasoning to your taste after simmering.

  6. 6

Bring the mixture to a gentle simmer, then reduce the heat to low, cover the pan, and cook for 15-20 minutes, allowing the flavors to meld and the sauce to thicken.

    About 20 min

Cook’s note: Stir occasionally to prevent sticking.

  7. 7

Remove from heat and garnish with fresh parsley before serving.

Cook’s note: Serve hot with warm pita bread or crusty whole-grain bread for dipping.
