  • 115 gdiced green chiles, canned, undrained
  • 225 gtomato sauce
  • 425 gkidney beans, canned, rinsed and drained
  • 425 gpinto beans, canned, rinsed and drained
  • 240 mlbeef broth
  • 1 tspsalt
  • 0.5 tspblack pepper, freshly ground

The method

Step by step

    In a large pot or Dutch oven, melt the butter over medium heat.

    Add the chopped onion and sauté for 5-7 minutes, until it becomes soft and translucent.

    Add the ground beef to the pot.

    Cook the beef, breaking it apart with a spoon, until it is fully browned, about 8-10 minutes.

    Cook’s note: If there's a lot of rendered fat, carefully drain most of it from the pot.

    Stir in the minced garlic, chili powder, ground cumin, dried oregano, salt, black pepper, and optional cayenne pepper.

    Cook for about one minute, stirring constantly, until the spices are fragrant.

    Add the undrained diced tomatoes, drained stewed tomatoes, undrained diced green chiles, and the tomato sauce to the pot.

    Stir in the rinsed and drained kidney beans and pinto beans, followed by the beef broth.

    Bring the mixture to a gentle boil, then reduce the heat to low to maintain a simmer.
