The method

Step by step

    Place the dried chickpeas in a large bowl and cover with plenty of cold water; let them soak overnight for at least 12 hours.

    Drain the soaked chickpeas thoroughly and pat them dry with a clean kitchen towel.

    Combine the drained chickpeas, yellow onion, fresh parsley, fresh cilantro, and garlic in a food processor.
