  • 500 gground beef, 80/20 lean
  • 794 gcrushed tomatoes
  • 2 tbsptomato paste
  • 1 tspdried oregano
  • 1 tspsalt
  • 0.5 tspblack pepper, freshly ground

  • 450 gricotta cheese, whole milk
  • 40 gparmesan cheese, grated
  • 1 pcslarge egg, lightly beaten
  • 2 tbspfresh parsley, chopped(optional)

  • 250 gno-boil lasagna noodles
  • 400 gmozzarella cheese, shredded, low-moisture

garnish

  • 10 gparmesan cheese, grated

The method

Step by step

    Preheat your oven to 190°C (375°F).

    Heat the olive oil in a large pot or Dutch oven over medium heat.

    Add the chopped yellow onion and cook until softened, about 5-7 minutes.

    Stir in the minced garlic and cook for one minute until fragrant.

    Add the ground beef to the pot, breaking it up with a spoon, and cook until browned all over.

    Cook’s note: Drain any excess fat from the pot after browning the meat for a less greasy sauce.

    Stir in the tomato paste, crushed tomatoes, dried oregano, salt, and black pepper.

    Bring the sauce to a simmer, then reduce the heat to low, cover, and let it cook for at least 30 minutes to allow the flavors to meld.

    While the sauce simmers, combine the ricotta cheese, parmesan cheese from the filling group, beaten egg, and chopped parsley in a medium bowl.

    Spread a thin layer of meat sauce on the bottom of a 23x33 cm (9x13 inch) baking dish.

    Cook’s note: This prevents the first layer of pasta from sticking to the dish.

    Arrange a single layer of no-boil lasagna noodles over the sauce.

    Spread half of the ricotta cheese mixture over the noodles, followed by a layer of meat sauce and a third of the shredded mozzarella cheese.

    Repeat the layers: noodles, the remaining ricotta mixture, meat sauce, and another third of the mozzarella.
