  • 120 mlvegetable broth

  • 1 pcsbay leaf
  • 3 tbspolive oil
  • 0.5 tspsalt
  • 0.25 tspblack pepper, freshly ground

The method

Step by step

    Heat olive oil in a large pot or Dutch oven over medium heat.

    Add the diced eggplant, zucchini, red bell pepper, and yellow bell pepper to the pot.

    Sauté the vegetables for about 8-10 minutes, stirring occasionally, until they begin to soften and lightly brown.

    Add the chopped yellow onion to the same pot and cook for 5-7 minutes until softened and translucent, adding a splash more olive oil if needed.
