- 0.5 pcsonion, finely chopped
- 1 pcsgreen pepper, finely chopped
- 2 pcstomato, diced or grated
- 0.5 tspsalt
- 0.25 tspblack pepper
- 0.5 tspred pepper flakes(optional)
- 4 pcsegg
garnish
- 1 tbspparsley, fresh, chopped(optional)
Equipment
knife · cutting board · non-stick pan
The method
Step by step
- 1
Heat the olive oil in a non-stick pan or skillet over medium heat.
About 1 min
- 2
Add the onion and green pepper to the pan and sauté for 5-7 minutes until softened.
About 7 min
- 3
Stir in the tomato, salt, black pepper, and red pepper flakes (if using). Bring the mixture to a simmer.
About 2 min
- 4
Reduce the heat to low, cover the pan, and cook for 10-12 minutes, allowing the tomatoes to break down and the flavors to meld.
About 12 min
Cook’s note: Stir occasionally to prevent sticking and ensure even cooking.
- 5
Make small wells in the tomato mixture and crack the eggs directly into them. You can also lightly scramble the eggs in a separate bowl before adding them.
About 1 min
- 6
Cover the pan again and cook for 3-5 minutes, or until the eggs are set to your desired consistency.
About 4 min
Cook’s note: For runnier yolks, cook for less time. For fully set eggs, cook longer.
- 7
Garnish with fresh parsley, if desired, and serve immediately.
About 1 min
Cook’s note: Menemen is traditionally served hot, directly from the pan, with plenty of crusty bread for dipping.
