The method
Step by step
- 1
Heat the coconut oil in a large skillet or pot over medium-high heat.
About 1 min
- 2
Add the chicken breast pieces to the hot pan and cook until lightly browned on all sides, about 5-7 minutes. Do not cook through completely.
About 6 min
Cook’s note: Cook in batches if necessary to avoid overcrowding the pan, which can steam the chicken instead of browning it.
- 3
Remove the chicken from the pan and set aside.
- 4
Add the yellow onion to the same pan and sauté for 3-4 minutes until softened.
About 3 min
- 5
Stir in the garlic and ginger, cooking for another minute until fragrant.
About 1 min
Cook’s note: Be careful not to burn the garlic.
- 6
Add the red bell pepper and cook for 2-3 minutes until slightly tender-crisp.
About 2 min
- 7
Pour in the coconut milk and chicken broth. Bring the mixture to a gentle simmer.
About 3 min
- 8
Return the chicken to the pan. Add the lime juice, fish sauce, salt, and black pepper.
- 9
Reduce the heat to low, cover, and simmer for 10-12 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
About 11 min
- 10
Taste and adjust seasoning as needed.
- 11
Serve hot, garnished with fresh cilantro.
Cook’s note: This dish pairs well with cauliflower rice or steamed vegetables.
